How to Make Crispy Roast Potatoes Recipe with red and green sauce


Here's a recipe for Crispy Roast Potatoes with Red and Green Sauce:

Ingredients:

- 2 pounds potatoes
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh cilantro
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- Juice of 1/2 lime
- 1 green jalapeño pepper, seeded and chopped
- 1 red jalapeño pepper, seeded and chopped

Instructions:

1. Preheat the oven to 400°F (200°C).

2. Wash and peel the potatoes, then cut them into wedges or cubes.

3. In a large bowl, toss the potatoes with olive oil, salt, and pepper until well coated.

4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until crispy and golden brown.

5. While the potatoes are roasting, prepare the red and green sauces.

6. For the green sauce, combine mayonnaise, sour cream, garlic, parsley, basil, cilantro, cumin, paprika, cayenne pepper, salt, lime juice, and green jalapeño pepper in a blender or food processor. Blend until smooth and set aside.

7. For the red sauce, repeat the same steps as the green sauce, but substitute the green jalapeño pepper with the red jalapeño pepper.

8. Serve the crispy roast potatoes hot with the red and green sauces on the side.
