How to Make and Cooked Indian Famous and Crispy Dosa Recipe
Dosa is a popular South Indian dish that is made from fermented batter of rice and lentils. It is a crispy, thin, and savory crepe-like pancake that is often served with a variety of chutneys and sambar. Here's a recipe to make crispy dosa:
Ingredients:
- 1 cup parboiled rice
- 1/2 cup urad dal
- 1/2 tsp fenugreek seeds
- Water
- Salt
- Oil or ghee for cooking
Instructions:
1. Rinse the rice, urad dal, and fenugreek seeds separately in water until the water runs clear.
2. Soak the rice, urad dal, and fenugreek seeds in separate bowls with enough water to cover them for at least 4 hours, or overnight.
3. Drain the water from the soaked urad dal and grind it in a blender or a wet grinder with enough water to make a smooth paste. The consistency should be like whipped cream.
4. Drain the water from the soaked rice and grind it in a blender or a wet grinder with enough water to make a smooth batter. The consistency should be like pancake batter.
5. Mix the urad dal paste and rice batter in a large bowl, add salt to taste, and mix well. The batter should be of pouring consistency, neither too thick nor too thin. Cover the bowl and let it ferment in a warm place for at least 8 hours or overnight.
6. The batter would have risen and become slightly sour due to the fermentation. Stir the batter well.
7. Heat a non-stick tawa or griddle on medium-high heat. Once the tawa is hot, pour a ladleful of batter in the center and spread it out in a circular motion with the back of the ladle to make a thin, even layer.
8. Drizzle some oil or ghee around the edges of the dosa and let it cook for 2-3 minutes or until the edges start to lift and become crispy.
9. Flip the dosa over and let it cook for another minute on the other side.
10. Serve the dosa hot with coconut chutney, tomato chutney, or sambar.
Enjoy your crispy and delicious dosa!
