Here's a recipe for bhindi masala gravy:


Ingredients:

- 500g bhindi (okra)

- 2 medium-sized onions, finely chopped

- 2 medium-sized tomatoes, finely chopped

- 2 green chillies, finely chopped

- 1 tablespoon ginger garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chilli powder

- 1/2 teaspoon garam masala powder

- Salt to taste

- 2 tablespoons oil

- Water as required

- Chopped coriander leaves for garnishing


Instructions:

1. Wash and pat dry the bhindi. Cut them into small pieces.

2. Heat oil in a pan and add cumin seeds. When they start to splutter, add chopped onions and green chillies. Saute till the onions turn golden brown.

3. Add ginger garlic paste and saute till the raw smell goes away.

4. Add chopped tomatoes and mix well. Cook for 5 minutes till the tomatoes become soft.

5. Add all the spice powders - coriander powder, turmeric powder, red chilli powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes.

6. Add the chopped bhindi and mix well. Add water as required to get a gravy consistency.

7. Cover and cook for 10-15 minutes on low flame till the bhindi is cooked and tender.

8. Once done, switch off the flame and garnish with chopped coriander leaves.

9. Serve hot with roti or rice.
